Happy Monday! I hope that everyone had a wonderful weekend. July is my birthday month, so I decided to celebrate this past weekend by indulging in some of my favorite foods at some of my favorite local restaurants. I started the weekend off by enjoying a chocolate croissant from my favorite french bakery and then my mom took me to lunch at one of my favorite restaurants. We had a scoop of raspberry mint sorbet for dessert and I can’t wait to try to recreate it because it was so delicious. Brad and I ended the day by indulging in delicious desserts we had picked up from the French bakery.
After a weekend of sweet treats and indulging a little more than usual, I’m starting the week off with these blackberry and nectarine parfaits. I love the combination of the tart flavor of the blackberries and the sweetness of the nectarines. I especially love parfaits on days when I know I am going to be really busy and may not be able to eat lunch until much later in the day. These parfaits are not only delicious but full of protein and wholesome ingredients.
For the granola, feel free to use either home made or store bought. I typically just use my favorite store bought granola which has almonds, pecans and honey in it.
- 3 cups Greek yogurt
- ¼ cup honey
- 2 cups blackberries
- 2 cups diced nectarines (about 2 medium nectarines, diced)
- 1 1/2 cups granola
- Combine the yogurt and the honey in a small bowl. Whisk to blend thoroughly.
- Using four 16-ounce glasses, spoon 1/3 cup of the yogurt-honey mixture into each glass. Top with ¼ cup of the blackberries and ¼ cup of the nectarines. Then spoon 3 tablespoons of the granola on top of the berries. Repeat the layering process again with the remaining yogurt, berries, nectarines and granola.
- Serve immediately.
