Strawberry Mango Salsa

We are back from our vacation to the island of Providenciales in the Turks and Caicos Islands. I have to admit, despite being back, I still feel like I am in island mode. I’m craving the beach, the rum punch and the delicious mango thai chicken and noodle salad I enjoyed on vacation. Today, I’m sharing this strawberry mango salsa recipe and a few pics from our trip.

It was our second trip to the island and we had a great time. We enjoyed some of our favorite things, snorkeling, swimming in gorgeous water, dining at fabulous restaurants and driving on the left. This trip, we also had the opportunity to dive off a diving board on top of a boat, kayak to a secluded island full of rock iguanas, and ride horses in the ocean. It has been over 10 years since I have ridden, but I had the opportunity to canter down the beach and swim in the ocean with the horses. I’m sure that you have seen a few different versions of this strawberry mango salsa recipe on various blogs and Pinterest. For this recipe, I used a few of my favorite ingredients that I had on hand. The flavors of the strawberry, mango, lime and basil create an appetizer that is sweet and refreshing. I love serving this salsa with cinnamon pita chips, but it would also work well with tortilla chips or served over chicken or fish.

Strawberry Mango Salsa

Yield: about 3 servings

Prep Time: 10 minutes

Strawberry Mango Salsa includes a taste of the tropics! The fresh flavors combine to create a delectable snack option.

Ingredients:

  • 1 cup diced mango
  • 1 cup diced strawberries
  • 2 tablespoons diced red onion
  • 2 tablespoons chopped fresh basil
  • 2 teaspoons honey
  • juice from 1 lime

Directions:

Combine mango, strawberries, onion, basil, honey and lime juice in a medium bowl. Stir to mix well. Serve with tortilla or pita chips.
