  • Chicken Broth – You can use vegetable broth instead.
  • Blue Cheese Dressing – You can use ranch dressing if desired.
  • Blue Cheese – You can omit the blue cheese crumbles, if desired.
  • Cream Cheese – This gives it the creamy texture.

  • Onion – A sweet or yellow onion works best.

Tips for Cooking the Pasta

  • Use a 12″ skillet or sauté pan. A classic stainless steel sauté pan is our favorite reasonably priced pan.
  • The chicken does not need to be cooked through completely. It just needs to be brown on all sides. It will finish cooking while the pasta is cooking.
  • Do not omit the broth or liquid as that helps to cook the pasta.
  • Be sure to cover the pan so that the pasta cooks completely. You can stir once while simmering, but immediately recover.
  • You can use another type of similar noodle. Rigatoni, fusilli or ziti noodles work well too. If you use a completely different type of noodle, you may need to adjust the cook time.

TIME SAVING TIP: Save time and chop the chicken and yellow onion in advance.

  1. Very yummy! I think next time though I’ll use shredded chicken (just personal texture preference) and add it at the end with buffalo sauce. I didn’t love how it tasted cooked into the pasta. But still definitely a keeper!

    1. Thanks so much for your feedback! I’m glad you loved it. You can definitely add shredded chicken, if desired.

    2. My 12 year-old daughter loves Buffalo wings, Buffalo dip and now this pasta. I used whole wheat pasta, ranch instead of blue cheese and a little fine shredded Mexican cheese. She told me that it taste like Buffalo Mac n cheese. This will be a new family favorite. Waiting to see when my husband eats it at work later if he will complain it was too hot.

      Thanks

  2. Made this for dinner tonight! We substituted vegan chik’n and tofu cream cheese and vegan blue cheese dressing. It came out great! Lovely post, thanks for the delicious dinner!
