Comfort food is the best, especially during the fall and winter season! Soup is the best comfort food because it’s warm and hearty. One of our favorite hearty soups is Lasagna Soup. This easy spinach lasagna soup is made with the same flavors as standard lasagna, but it is simmered on the stove with both and a few other fresh ingredients to create a warm and comforting bowl of goodness. Tips for making lasagna soup

  • You can use lean ground beef in large chunks instead of sausage.
  • You can omit the spinach, if desired. Although we recommend adding the spinach because it’s a great way to sneak nutrients into the meal.
  • Omit the heavy cream to make this soup lighter.
  • Use a dairy substitute for the cream and cheese, if desired.
  • This soup reheats well and tastes even better as leftovers. Store in a sealed container in the refrigerator for up to 3 days.
