One of my favorite things about this time of the year are the fresh cucumbers. I don’t mean the cucumbers you buy at the grocery store. I’m talking about the ones you grow in your garden or buy at the local farmer’s market. Can you taste the difference between fresh local cucumbers and the ones at the grocery store? Fresh or locally grown cucumbers taste so much better than anything you can purchase at the store. In fact, I rarely purchase cucumbers from the store as I think they lack good texture and flavor. But, I can’t resist devouring the cucumbers from my garden. They are crisp, crunchy and the perfect addition to this salad. The simple vinaigrette adds a subtle and delicious flavor to the salad.

Thai Cucumber Salad
- 2 english cucumbers
- 1 small red onion sliced
- 1/4 cup diced red bell pepper
- 1/4 cup diced yellow bell pepper
- 2 tablespoons apple cider vinegar
- 1 teaspoon sesame oil
- 1 teaspoon honey
- 1/4 teaspoon red chili flakes
- 1/4 teaspoon salt
- In a large bowl, combine the cucumbers, red onion and bell peppers.
- In a small bowl, whisk together the apple cider vinegar, sesame oil, honey, chili flakes and salt. Drizzle the dressing over the cucumber mixture and toss to combine. Enjoy!
- Store this salad in the refrigerator for up to 3 days.
