The hottest days of summer are here. I don’t know about you, but there are two things I actively try to do all summer – stay cool and keep my garden alive. Staying cool is easy. I grab myself a refreshing Pineapple Peach Mojito and relax by a pool or beach. Keeping my garden alive is more difficult. In Florida, it heats up quickly and most of my spring plants and vegetables wilt by July. My peppers, eggplant, and basil flourish, but the other plants I actively monitor to make sure they don’t succumb to the heat or receive too much or too little water.

With a robust herb garden that flourishes in the summer when conditions are right, I always have plenty of mint, rosemary, thyme and more. One of my favorite ways to use the mint is a flavorful and refreshing mojito. Today, I combined some of my favorite seasonal fruit with fresh mint to create the perfect drink to cool you down this summer.

Yields 2 servings

Pineapple Peach Mojito
Save Recipe


  • 1 ripe peach, skin removed and sliced
  • 10 mint leaves
  • juice of 1 lime
  • 1/2 cup pineapple juice
  • 2 ounces white rum
  • club soda, chilled
  • pineapple slices for garnish


  1. Divide the peach slices, mint leaves, lime juice and 1/4 cup pineapple juice between two glasses. Use a muddler or spoon to crush the peaches and mint leaves to release the mint oils and juice from the peach. Divide rum between glasses. Fill the glass with ice cubes and top with remaining pineapple juice and club soda. Garnish with pineapple slices. Enjoy.
